RUSSIAN CHICKEN

Russian Chicken has tender chunks of chicken baked in an easy and delicious tangy sauce for a simple and satisfying weeknight meal that the whole family will love!
INGREDIENTS
4-6 boneless, skinless chicken breasts, cut into 1-inch pieces
1 cup Russian or Catalina dressing
1 cup apricot preserves
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground pepper
1 pkg. dry onion soup mix
INSTRUCTIONS
Preheat oven to 400 degrees F. Pat chicken pieces dry with a paper towel, then add to a casserole dish. Combine the dressing, preserves, garlic powder, dry onion soup, salt, and pepper in a blender or food processor. Blend or pulse until smooth, then pour over the chicken, tossing to coat evenly. Cover the casserole dish with foil and bake for 40-50 minutes, removing the foil during the last 10 minutes of baking until the chicken is cooked through and the sauce is hot and bubbly. Remove foil and Serve.
WHAT TO SERVE WITH RUSSIAN CHICKEN?
While Russian chicken is great served over white or brown rice, you could also serve it over pasta, egg noodles, or even with mashed potatoes. We also love to serve a good vegetable like roasted asparagus or a nice salad with homemade Olive Garden salad dressing with this dinner.
